Breakfast Recipe: Blueberry Protein Pancakes

It's been a while since I've posted a recipe on here so I'm back with a yummy one!  Saturdays to me are my sleep in, have breakfast at noon if you want, kind of days.  Since I give myself an ample amount of time to sleep in without a problem, the biggest pro that comes out of this, is I get to make myself an enjoyable breakfast!  A few weeks ago I made blueberry protein pancakes and they were so yummy I had to share.  They're super easy to make and don't require too much time because they cook up right before your eyes, lets go over the ingredients!



You'll need:
  • 1/2 cup uncooked oats
  • 1/3 cup Egg whites
  • 1 scoop of Vanilla Protein Powder (I use the Intek brand found at my local Wholesale Nutrition Center)
  • 1 tablespoon Ground Flaxseed
  • 1/4 of a ripe Banana
  • 1 tablespoon Greek Yogurt
  • 1 teaspoon Cinnamon
  • 1/4 cup Blueberries


Directions:
  • Toss all of your ingredients, minus the blueberries, into a blender and blend until the contents are smooth.
  • Heat your pan up to medium-high and spray your pan with olive oil (this is personally my favorite but any other will do.)
  • Pour half of your mix into the pan and drop a few blueberries over it.  Unlike regular pancakes, these won't bubble up on top as your indication that the bottom is ready to flip over.  I'd say wait about 10-15 seconds before you flip your pancake over.
  • Once you've flipped your pancake over, pour another few blueberries on top and cook for about 15-20 seconds.
  • Repeat these simple steps for the next pancake!
Once your pancakes are fully cooked, top them with the rest of your blueberries, your favorite pancake syrup and you're ready to eat-enjoy!
