Side Note + Easy Snack

When did I turn into such a stranger?!  The last month of my life has been so full of several different emotions ranging from triumph, defeat and fear.  It was a month full of life lessons and as I now reflect on all that was learned, I feel like I've cultivated a new fire under me to continue making life what I've always imagined it to be.  Le sighhhhh enough of this side note, let's get into the fun part!



I've recently discovered the world of organic food shopping (I know I'm way behind) but I'm so obsessed with this lifestyle.  The food tastes amazing, the recipe's are simple and I'm enjoying every single bit of it!  My food habits took a dramatic turn a few years ago when my dad suffered a severe heart attack and made me open my eyes real wide to the pattern I was following.  I've kind of developed this phobia of being diagnosed with some sort of disease that it's motivated me (for the best!) to clean up my body.  I've become more conscious of my food intake, what type of food I eat, how I cook it and how often I exercise.  I used to be an avid snacker, I would get real full off of just snacks and then feel so sick later on.  Flash forward a few years later, I've learned that snacking is okay, but making better snack choices makes a WORLD of a difference.  One of my new favorite snacks is watermelon with feta.  Watermelon is so deliciously fresh, it's a great source of both Vitamin A and C, and gets you real full without the guilt.  I'm a cheese lover but also understand I can't consume so much of it, therefore I choose a healthier type of cheese like Feta!  See the basic instructions below, enjoy eating this snack and don't forget to thank me later ;)!

You'll Need

  • 1 Small Watermelon-Or however big you want, I bought mine at Sprouts
  • 1 tub of Feta cheese-Purchased my little tub from Sprouts for like $4
  • A few mint leaves for taste (Optional)-I luckily have a mint plant in my patio, so I just picked a few off

Instructions

  • On a cutting board, cut your watermelon-super basic lol.  I usually cut it in half and then in half again, don't really get too crazy with my cutting method.  I cut huge blocks first, then minimize them into small square bites.
  • If you've used mint, sprinkle a few mint leaves over the watermelon and let them sit for about 10 minutes to really grab that fresh taste.
  • Finally, it's time to indulgeeeee.  Pour your desired amount of watermelon on a plate, bowl or in a cup and sprinkle your Feta all over the top.

Super simple, super delicious!
