Chicken Tortilla Soup - Crockpot Recipe

Get your crockpots ready, ladies and gentlemen! If you're a chicken tortilla soup fan, this is the only recipe you need - also most likely the easiest.  I'm a total soup girl and chicken tortilla is one of my absolute favs. I've never had much luck making a good version of this soup, but honestly this version is the one I can make every single week and not get bored. You only need a few basic ingredients to make 4-5 servings, so let's get right to the deets!

Ingredients

One pound of chicken breast

32 oz of chicken broth

1 can of corn (14 oz)

1 can of black beans (14 oz)

1 can of roasted tomatoes (14 oz)

Garlic Salt (or just salt) and Paprika 

Cilantro (Just a few stems to finely chop)


Toppings

Avocado

Cheese

Tortilla Chips

Lime wedge

How To

1. Strain your beans and corn and add both to your pot, followed by the entire can of tomatoes and chicken breast. 

2. Season your chicken with garlic salt and paprika (I seasoned well and would say I added about a tablespoon and a half worth of each) then pour in your chicken broth. Give all ingredients a stir and pressure cook for 30 minutes. 

3. After 30 minutes, remove the chicken breast from the pot, shred it and pour it back in. The chicken should be super tender when removing from the pot, it'll likely break apart on its own! 

4. Finely chop about 10 stems of cilantro and add that into your pot and stir. 

5. Serve and top with avocado, shredded cheese and tortilla chips.
